Must Try Recipe!

I made THIS bruschetta chicken pasta for dinner, and it was AMAZING. I will definitely be making this again (and again, and again!)

I threw some mushrooms in my stuffing, and used the low sodium kind instead. I also drizzled some EVOO in the stuffing mix.

So yummy!

A quick update

I'm still playing phone tag with the vet, so my sweet old horsey has yet to get checked out. I'm still praying its nothing serious. Hopefully within the next week I can have her checked out and on the road to good health. I will be sure to keep y'all updated, and thanks again for those of you who sent prayers/happy thoughts our way after the last post.

We FINALLY got our taxes back! Wahoo. Thanks Uncle Sam for that $10,539 check in my mailbox. I greatly appreciated it. Pretty soon I will be getting my land cleared off so my sweet horses can come live 5 minutes away instead of 50 :( If you've been reading my blog for a few months, then you've heard me rant and rave about the process and a half it's been to get my taxes back. I should have kept my maiden name for all the trouble this has caused! lol

My kiddos did pretty well on their Math & Reading End of Grade tests. I'm so proud of my students for all of their hard work, and I'm going to miss the little buggers when they go off to middle school (and PCS far, far away from me. ::sad face::) We hit over 80% passing in Math (just 3 out of my 16 kiddos didnt) and Reading wasnt far behind that! Hippy! Hopefully when they retest in June we can get the rest to pass since they were SOOOOO close (within 4pts)! I really hate this time of year for them. They beat themselves up over these tests, and the state keeps changing them around so there is no real consistency. Lame!

Hubs is on his way to TN this weekend to his mom's house. Thankfully he's only planning on staying one night since him and his mother don't really get along. If you'd like to know how much I LOVE my Mother-In-Law (NOT!!!) then check out this awesome letter I got from her HERE. She's so nice to me :)
He's picking up a motor from a friend of his step-fathers for the Camero. I can't freaking wait for it to be fixed up and out of my garage! ha ha!

I plan on spending the rest of the weekend relaxing and hopefully we'll be getting the boat out on the lake. I'm thankful for the long weekend, but at the same time, I hate that we even have to have a holiday to remember the fallen... sadly, this is the world we live in. Hopefully somewhere down the line, humanity will learn to get along, and stop killing each other over petty differences. A girl can dream right?!

Sweet Tea

I love ALMOST everything about living in the South... except Sweet Tea.

I love love love iced tea with lemon, but I am not a huge fan of sweets to begin with, so the thought of all of that sugar grosses me out. I cannot for the life of me drink more than a sip of it. However, the hubs is OBSESSED with the stuff. That's all he ever wants to drink. Every time I watch him making it with two CUPS of sugar per pitcher, I always think of this guy from Men In Black during the part where he keeps asking for more SUGAR. Lol.

Hopefully the hubs never turns out looking like this guy!!

Hello new nightstand!

I needed a mate for THIS dresser
I've had this little beaut for a while, but didn't have time to redo it.

It's actually not as dark as it looks... but I'm so proud of it, it don't want to wait until the sun comes back out to take some pictures in natural light. lol

Here is the "BEFORE" except I forgot to take one before I took off the ugly knobs and sanded it down

It had this AWFUL lip on the bottom... so I convinced my darling husband to attach some crown molding for me :D

And b/c he's just so darn cute ;)

I thought I'd never make it...

... this is the WORST time of year to have any interaction with children. lol. I love them to death, but holy hell they are full of piss and vinegar lately. A combination of anxiety over their End Of Grade tests, and the excitement of summer slowly creeping up has got them in hyperdrive.

I am VERY pleased to announce that my class met their goal of 80% pass rate on their Science EOG test! Woohoo! We had 13/16 pass, and the ones who didnt pass did AWESOME! They know their stuff, but they are not strong readers, and because the people who make this test are EVIL and have to ask questions in a round-about, overly-wordy way, they were pretty much setting these kiddos up for failure! Jerks! Hopefully soon they will go do away with standardize testing, and have some sort of short answer type test where these kiddos can shine, and show what they know!

Wee #46

{one} do you watch the history channel? if so, what’s your favorite program?
Not regularly. I don't really ever watch TV. I like cheesy ABC family shows like Secret Life and Pretty Little Liars, and NCIS: LA... but those are the only shows I watch regularly.

{two} what is your favorite thing to do on a rainy day?
Sleep! or watch movies.

{three} what does your dream house look like?
A huge log cabin on 100+ acres surrounded by horse pastures full of beautiful horses.

{four} what state were you born in?
New York

{five} do you have a change jar? if so, what do you use it for when it gets full?
Yep. We've got about 1/3 of one of those giant pickle jars full. We say it's a vacation fund, but we really have no plans to go on vacation. lol. It's more or less a place for me to pick up all the change that the hubs leaves all over the house.

{six} what’s the first website you look at when you get on the computer?
Facebook then Blogger (my email gets sent to my phone, or I'd check that first)

{seven} what is your favorite breakfast?
I really have to be in the mood for breakfast... but I LOVE a good NY bagel. You can't get a good bagel around here. Wahhhhhhhhhh :( Just like Pizza in the South is severely lacking! Dominos is the grossest thing on the planet!! The first thing I ask every time I go home to NY is to order pizza.

{eight} what’s the most memorable trip you’ve ever taken?

{nine} do you prefer your coffee black or with cream/milk/sugar?
I don't really drink coffee... but when I do, it's iced, light and sweet.

{ten} have you ever done a professional photo shoot?
Done as in taken peoples pictures, or had mine done? I guess you could say yes to both, but I wouldnt consider myself a professional, nor do I want to be. I just like taking pictures that make people happy.

Crafty This, and Crafty That... and prayers please!

I've had both of these projects for months a while, and FINALLY found a minute to finish them. The hubs is in a 24hr fishing tournament for St Judes, so I have some quite, alone time :)

And lastly, if you're the praying type, please say a few for my sweet girl. This pretty lady is 22 years old, and she's having a hard time keeping weight on. We got her nice and fat, then her, and the 3 other horses got colic last month from eating themselves nearly to death on a bail of hay. Ever since then she's been a skeleton again. We're going to get a vet out there to check her out, but if y'all wouldnt mind saying a kind word for her, and hoping that it's nothing too serious :(

Wee #45

{one} what profession have you always admired?
(I love all of you that put teachers! We don't get admired as often as you'd think!) Anyone in public service... nurses, police officers, firefighters, etc. Anyone who is more passionate about their job than they are about their paycheck!!

{two} what would the title of your memoir/biography be if it was written today?
Tales of a young teachers driven to the edge of insanity by a pack of 10 year olds!

{three} how far do you commute to work?
about 6 miles one way :P And I'm the one who drives the little fuel efficient car... whereas my hubs drives 12 miles one way, then all over the Army post, in his giant gas guzzling truck... oh well. Boys have to have their toys!

{four} are your earlobes attached or detached?
Detached... and the right one is "missing a chunk"... Not really, but that's what it looks like. When I was 5 or 6 I was having a hearing screening at school. The school nurse pushed the headphones onto my head. It caught my rather large Ms Piggy earring, and she continued to push them while I screamed bloody murder. She pushed the earring right out of my ear. I was so traumatized that my parents chose not to get the two pieces stitched together, and the way they healed makes it look like a chunk is taken out of it... At least I can gross my students out when I "make my ear talk" lol

{five} do you eat the unpopped kernels of popcorn at the bottom of the bag?
LOVE half popped kernels. When I worked at the movie theater, we had to sift them out of the popcorn by raking the popcorn over this grate. We would then take the "trash popcorn" out and snack on all the half popped ones since they were going to get tossed anyway.

{six} what is the strangest gift you’ve ever received?
I teach 10 year olds... I get strange gifts at least once a week! lol

{seven} what is one tv show that you wish hadn’t been cancelled?
Two and a half men... Not that I like the show, but the hubs is OBSESSED with it. I am SOOOOOO sick of watching the same old episodes over and over again. I know Sheen is crazy and all, but I really wish CBS would take his crazy ass back so that I didnt have to watch reruns!

{eight} what is something that you are saving money for right now?
Paying off the land we got.

{nine} what hobby would you like to take up?
I have too many as it is... but I can't wait to have my horses close so that I can ride them!

{ten} how many times a year do you get really dressed up?
Defined dressed up... Like prom style? Rarely... maybe once every 2 years for weddings and military balls... but being dressed nicely, then Mon-Thurs (we're allowed to wear jeans on Friday if we donated to the United Way)

You know you're a fattie when...

Pretty sure I just ate a square of baker's chocolate because I felt like I NEEDED chocolate, and I was too lazy to go to the store and get a candy bar... and of coarse I ate the whole thing, even though it didnt taste very good, because well, I'm a fattie! ha!

Total fat-ass status here. oh well! lol

For my dog lovers!

Check out THIS photo essay of War Dogs that I found via an article on the Yahoo homepage. It has some amazing pictures of how the military is using dogs to aid in the war efforts, and it contains some interesting facts.

"The rate of detection with the Pentagon's fanciest equipment -- drones and aerial detectors -- was a 50 percent success rate, but when a dog was involved it rose 30 percent."

That's pretty cool IMO. And for a mere $20,000, you can have your very own genetically altered bomb sniffing dog that can sniff out suicide bombers in a crowd, and tell their handler without being detected. Pretty amazing if you ask me!

Wee #44

{one} when was the last time you used a pay phone (if ever)?
Ummm... I honestly can't think of a time that I've used one, but I'm sure that I have. Maybe to call home before I got a cell phone?

{two} did you ever fail a subject in school?
Noppers. I got ONE stupid C in 5th grade science... funny how my favorite subject to teach now is 5th grade science. lol. I really just hated the unit on Astronomy. I got A's and B's all of the other quarters :)

{three} where do you go to get your favorite hamburger/cheeseburger?
Red Robin! Love their blue ribbon burger. I'm a big fan of everything with blue cheese crumbles, although I hate blue cheese dressing. lol.

{four} have you ever served jury duty?
Yep. It was right after I moved to North Carolina though, so NY didn't get lucky to torture me with jury duty. 

{five} how old were you when you moved out of your parents’ house?
I went away to college a month before my 18th birthday, however, I moved home every summer. I officially moved out on my own 2 months before my 22nd birthday... about 700 miles away!

{six} what is your favorite color to wear?
Black mostly... before it was black and pink, then black and teal, now I am obsessed with black and purple... I just so happen to be wearing it right now :)

{seven} do you have a pair of shoes that you wear all the time?
To work it varies because I can't wear flip flops... if I'm not at work, and it's warm, that's what I have on.

{eight} do you enjoy talk radio?
Not specifically talk radio, but there are a few morning shows that I enjoy down here.

{nine} if you could turn one unhealthy food into a healthy one, what food would it be?
PASTA!! For sure. I could eat my weight in it. Any kind, I love it.

Dear Liberty Tax

..you can take your statue of liberty torch and shove it up your rear!

I got a frantic text from the hubs while at work saying he was going to blow up Liberty Tax today.

I am BEYOND fed up with this company. I don't care how much longer the wait is at H&R Block, I will NEVER use Liberty again. I knew from the start, when we had a noticeably inexperienced representative filing for us that it was going to be trouble... but I felt bad for the owner, who had just opened the franchise, and she was super sweet, so we continued on.

After battling the IRS since Feb 15th (that was the earliest we could submit because of our tax deductions) due to the fact that I had changed my name in August to my married name, and the IRS had no record of this. I harassed Social Security, and they said they couldnt do anything. After stalking the IRS webpage for weeks and weeks, we finally saw that we were going to have our money deposited his past Friday.

Well, on Friday, the people at Liberty decided that they weren't going to worry about taking care of business, and did not follow through on a very important step with our return, which caused our money to be lost in banking cyber space. WHAT? How does one lose TEN THOUSAND DOLLARS?! Yep, thanks to Obama and his home buyers tax credit, we are getting a 10k return this year. To make matters worse, THEY HAVE NO RECORDS OF US EVER FILING THERE? Really? How do you expect to run a business if you don't keep records of your transactions? Especially when dealing with peoples money?

Not that we're going to die if we don't get it, but a majority of our return is going to getting our pastures set up for our horses. They've been boarded over an hour away for far too long, and I'm dying with anticipation to get them here, close to us, so that I can see them on a regular basis. With gas being predicted to hit $6 this summer, there is no way I can make that drive as often as I'd like. Now, we have to wait even longer to be able to get our land cleared and fenced for them.

Thankfully, after more than a few irate phone calls, we have discovered that our tax money has been returned to the IRS, so we will have to be reissued a check (hopefully this won't take forever) and it will be coming directly to us, so Liberty will not be getting their $400 for preparing our taxes for us. A small compensation for the major headache they have caused.

At least all of this was resolved before my Field Artillery trained husband who has a VERY short temper could find the means to blow up their building. he he.

I may lose a follower or two, but I'm going to say it anyway...

This REALLY pisses me off:

Now let me say, that I'm not a FAN of Obama, but I don't hate the guy. The only problem I had with him running was that I thought he lacked experience... He is however giving me $8,000 for buying a house, so I honestly have no reason to dislike the guy... However, what did he really do in all of this? Did he shoot bin Laden? Didn't he want to pull out of the Middle East?

Why is my facebook page littered with THIS image over and over again? Where are the ones that say "Way to go troops!" or "Hell Ya Navy Seals!" I just think it's incredibly shitty that for the past ten years our TROOPS have been fighting terrorism, yet I'm seeing MINIMAL thanks going out to them, and it seems like every status on my feed is praising Obama.

**Edit** This is in no way a post against Obama. I don't think that he is trying to take credit for killing him, I just think it's crumby that people are giving him credit for it. The fact that the about image says "I was too busy killing Osama" is the part that irks me to no end, and I'm 99.999999 sure Obama didn't hop on Photoshop and make that for himself though, so I can't be mad at him for it. Too many people who sweat Obama are seeing this as a win for his campaign, and I don't think people should re-elect him because of it. It should be based off of what he actually does in his time in office... not what he says he will do, or what other politicians allege that he did.
