Thanks for sticking around!

Things have been absolutely crazy here lately. Between vet visits for the horses, and getting myself back into the swing of school, I am absolutely BEAT!

I'm not sure if I mentioned it, but I had to move classrooms this summer. I got moved from my nice new classroom, to an ANCIENT relocatable... aka trailer. It smells and has horrible carpet. This is my 5th year teaching, and lets just say I have a ton of stuff, so moving was no easy task. It took weeks. Add this to the fact that I spent 3 out of my 6 teacher work days in a horrible training class, and I was NOT prepared for the first day of school.

On open house I got to meet 26 of my 27 students, and by the first day, I was up to 29! That's 30 bodies in a not so large trailer. It's been a less than pleasant experience. I'm super thankful that my principal thinks highly enough of me to make me an Academically Gifted class, but it's such a head ache. Every time an AG student gets added, they are put in my room, but she's not pulling students who are not AG out. The other teachers have 25-26 students. I'm hoping the Lord can bless me with some patience, because I have a feeling this is going to be a VERY long year already. lol

We've had the vet out twice in the past month. First the horses needed their teeth floated. Illusion (our old  lady) gave the Dr hell, and refused to fall asleep, even with a double douse of medicine. She was purely rotten. Thankfully Gilly was much better behaved. The Dr took some blood, and her tests came back perfect (except for 1 which she said should level out) so the meds are helping, and she's handling the Cushing's like a champ :D

Gilly has been having some issues with her back leg recently, so we had to have the Dr out again. She came to 3 conclusions. Since she is not in pain, and she can walk on it just fine, we're not going to shell out the thousands of dollars for surgery. She's hoping that it's only a joint problem/arthritis (she's 10) and she wants to try her on a joint supplement and light exercise. Hopefully that works out. If not, she probably wont be able to be ridden again. I'm just super thankful that it's not causing her an problems (it only happens when she runs) so there is absolutely no reason that we will have to put her down because of it. I dont even want to think about what a mess I'd be if it was something more serious.

I'm off to write lesson plans, and pretend to be prepared for my first full week with 29 rug rats.

I'll leave you with a picture of my parents house. My mom got all worked up about me being safe during Irene, when they got hit harder than we did! I never thought it would be safer to be in NC during a hurricane than it is to be in NY! My dad works for the power company, so he will more than likely be spending the next few weeks in NYC/Long Island restoring power. His company has over 1,000 hotel rooms reserved for them.

 They now have lake front property ;)

Ohhh Uncle Sam

Super Easy Alfredo

Totally unhealthy, but it's easy & delish!

I make mine on a large scale, because I dont make it very often (since its not so good for you. lol) and it's my husbands absolute favorite thing I make

2 boxes of fettucini (I use whole wheat so I feel less guilty)
2-3 large chicken breast
Olive Oil
Garlic Powder
Italian Seasoning
1qt Heavy Cream
2 8oz bags of shredded Parm Cheese

Boil water/cook pasta per directions on the box

In a frying pan add enough olive oil to make a light coat on the bottom
Dice up chicken & add to oil
Sprinkle with garlic & Italian seasonings
Cook until chicken is completely white

Alfredo Sauce:
Add one qt of Heavy Cream & 1/2 cup of butter (This is the part where it's bad for you, but tastes oh so good)
Cook on LOW until butter melts
Add a package and a half of cheese
Stir like crazy until the cheese melts (dont let it burn on the bottom)
(If you're making a smaller portion, the ratio is 1 cup cream, 1/2 cup cheese, 1/4 cup butter)

Mix pasta, sauce, and chicken, top with a sprinkle of the remaining cheese & enjoy!
I usually add some broccoli as well (again to make myself feel not so bad about all that butter and cream. lol)

Another American Tragedy

RIP to the brave troop that lost their lives in a helicopter crash in Afghanistan. Another tragic loss for America. Its depressing to think that over 300 soldiers have lost their lives in the past year. I hope if nothing else, it serves as a reminder that killing Osama was NOT the end of the war in the middle east, and people were naive to think so. As sad as it is to say, I dont foresee an end to this conflict anywhere in sight.

My husband had the honor of knowing most of the Seals lost. They taught him how to play water polo when they were in Iraq together last year. They even came in 1st place. It makes going to the 'Stan in the spring that much more real to him, and I don't like it one bit :/

Thursday Link Up :)

Day 2: 9 Loves

NINE? I can only pick NINE things I love? Well this sucks!

In no particular order (aside from Family always being #1) here they are:

2. Furry animals... most of the ones with feathers... some amphibians are cool too... If you've got scales AND legs, I might like you, but 76 the legs and there is NO LOVE. Snakes. YICK!
3. Art... any form. Painting, drawing, crafting, photography...
4. Country Living... I was so born to live in the South

7. Being outside & experiencing natures beauty
8. Cooking something really delicious (I wish I knew how to bake, but neither the hubs nor I like baked goods, so I have no one to practice on)

Wee #52

{one} what was one thing that you valued when you were a kid?
Back then? It was probably something silly like my American Girl Doll, or my Super NES (which I still have BTW) but looking back I value the imagination I had. We NEVER played inside. If I was home, I was outside with my sister and cousin Tom. If I was at the babysitter, we were normally outside as well. We used to catch critters, make forts & games, and get into all sorts of creative mischief. I really appreciate my parents for sending us out the door with nothing and letting our imaginations run wild. I think it's a lost art with a lot of todays youth, and its somewhat tragic. My children will totally be forced to play outside.

{two} what was your favorite (+ lease favorite) subject in school?
ART. I took every art class that I could in all sorts of mediums. I didnt really hate any class. I disliked teachers b/c they didnt do a good job, or were evil... but I'm the type that always did well at school, so I never really hated it too much.

{three} do you remember your first love?

{four} what one pet would you love to have?
More horses

{five} would you rather live in the country or in the city?
Well I cant very well have horses in the city? Can I? lol. I was born in an itty bitty town in Upstate NY, and I was raised a country girl, and that's what I'll always be, and I'm sure it's what my kids will be. lol

{six} what do you love about blogging?
To me it's like reading a great book that doesnt end!

Depends... at work its business casual. At home it's pjs, and if I'm leaving the house its normally jeans & a tee since I can't wear them to work

Kiddos are so cute

We have Edmodo at our school. It's like facebook for kids. They can only post on the wall (which I can monitor) so there is no secret messaging, or IMing. We use it for homework and whatnot.

10 Day Challenge

I tried a 30 day challenge, but I didnt make it very far. I'm hoping I can commit to 10 days. I have just about 10 days until I go back to work, so it works out nicely.

I found the idea on Liv's blog (visit here HERE) & she found it on another, so I'm not entirely sure where it started, so I can't give credit, but here it goes:

10 Secrets (or as close to secrets as I've got)
1. I really wish I had the ambition to go to veterinary school. I love my students and all, but I have a million times more compassion for animals. When I watch a movie where a person dies, I rarely cry... however if an animal dies, I cry every time. Every. Time. I'm glad my house isnt any bigger, because I worry I may become an animal hoarder. 
2. I have a severe hatred for nepotism & brown-nosers. I think its disgusting to see the measures that people will go to be the favorite. This school year I will be in a hut outside the building with the rest of the 5th grade. At first I was annoyed at having to move, but I am more than happy to be out of the school and away from all of the butt-kissers. I absolutely refuse to go out of my way to get recognition.
3. I love dating shows like The Bachelor & Sweet Home Alabama... and pretty much every cheesy tween show on ABC family (I'm watching Switched @ Birth as I type this).
4. I could live on sushi and pasta... not together of course. If there was no such thing as pasta, I would be a lot skinnier for sure.
5. I never really liked cartoons... probably because my mom hates them, so we never really watched them growing up
6. I can't stand the idea of being broke. The idea of not having money in my bank account gives me a serious case of anxiety. Thankfully, my dad taught me to be a saver at an early age.
7. Although my husband and I met at a bar, I secretly love the story of how we met. I remember everything from that night, down to what we were wearing. I'm not sure if I've shared this story before, but I'll share it again. I had noticed him looking at me a few times from across the bar. Finally, he came over to talk to me, and on the way he got intercepted by this older woman in a terrible 70's patterned dress. She told him that his friend had sent her over, saying he was single. He looked at me in desperation to save him from her, but all I could do was laugh. He finally got rid of her and came over to yell at me for not helping him... and the rest is history. He was in my phone as "Cougar Lover" for a long time & I still tease him about it.
8. I have a hard time without constant mental stimulation. The hubs always gets on me for being on my computer/in a book so often, but I can't just sit and watch tv. I feel like I always need to be reading something.
9. I hate dusting more than any other chore. (My house may possibly be dusty right now)
10. I'd rather be deaf than blind any day.
