My Little Ponies

...like to try to eat cameras, and refuse to let me take full face pictures of them... instead I get "artsy" pictures of their eyes & noses. Rotten little stinkers. lol

I changed a few to B&W trying to decide on which ones I like better for Babygirl's room. Thoughts? Should I go B&W with them all, or leave them all in color? Or mix & match? Decisions, decisions.

it's slowly getting there

Update on Babygirl's room: 

This is the before photo... full of crap the hubs shoved in there, and if you look closely, you can see its torn along the bottom. I got these years ago on super sale at BedBath.

My ghetto version of making a pattern... I am a rebel when it comes to sewing, and just kind of go with it, under the assumption that I can seem-rip anything I royally mess up. lol

The finished product... LOVE IT!! 

I made new curtains too :) Eventually it'll have a cute plaid strip... as soon as I find fabric that somewhat matches the bedding set I have

New bin in its new home (this shelf was black, and the hubs oh so kindly painted it "raspberry" for me) I have another bin for the other side, but I havent covered that one in the cutesy horse fabric yet 

The super gorgeous bedding that I got basically FOR FREE :) Our CCR teacher wanted to sell her crib before her husband came home from deployment since he's been hinting he wants another kiddo. She sold me the crib/dresser/changing table/toddler bed combo AND a pack & play for $120, and she threw in this ($200) bedding for free! I totally felt like I was ripping her off, but thats all she wanted for it. SCORE! The hummingbird doesnt exactly go with my horse theme, but I absolutely love the pink plaid/teal flower combo, and the reverse side of the hummingbird is the pretty pink plaid

Tex-Mex Chicken Stew

This is another one from my momma... this one comes from Slow Cooker Revolution

Time-4-6hrs on low (mine took 4 hrs)

2 onions, minced
2 jalapenos-seeded & minced
6 garlic cloves, minced
1 tbs tomato paste
1 tbs vegetable oil
1 tbs chili powder
4 cups chicken broth
1 can diced tomatoes
1/4 c minute tapioca (thickener)
1 tbs light brown sugar
3lbs boneless, skinless chicken thighs
S&P (to season the chicken)
2 c frozen corn
1 15oz can black beans-drained & rinsed
1 canned chipotle chili in adobo sauce-minced
1/4 c fresh cilantro

I didn't follow the measurements above AT ALL. lol. I just added the ingredients, and winged it, so you def dont have to follow it exactly... I wanted a larger batch so I had tons of leftovers... I also added celery, mushrooms & rice to mine.

First microwave the onions, veggie oil, tomato paste, jalapenos, chili powder, and garlic for 5 minutes (softens the onions for you)

Drop it in your slow cooker (I used a stock pot on low since my crock pot isnt very big) and stir in broth, tomatoes, tapioca & chicken-Cook on low until chicken is cooked through

Pull out the chicken thighs and shread them-Add remaining ingredients and heat through. Last I tossed in some rice (the more broth, the more rice you can add... I used two boxes of fat free/low sodium broth, so I added about 3 c of rice) and simmer until rice is tender.

Top with a little shredded cheese and enjoy :)




Heath Bar Pie

The hubs is obsessed with this pie, and since I was silly enough to take him to the grocery store with me, the ingredients somehow ended up in my cart. Sneaky little devil ;)

I'm not sure where the recipe came from, since it was passed down from my mom to me, but if anyone knows its origins, let me know, and I will gladly give credit where credit is due!



 
Prep time 15 plus refridgerating
 
4oz philadelphia cream cheese softened
1 tbs milk
1 tub cool whip
2 pkg health bars chopped (or snickers)... Walmart sells heath bits to save you from having so smash them :)
1 3/4 cup cold milk (versus warm milk)
2 pkgs chocolate flavor instant pudding
1 chocolate pie crust
 
Mix creamcheese and 1 tbs milk in bowl wire whisk until smooth.  
 
Gently stir in 2 cups whipped cream and chopped candy; set aside.
 
Pour 1 3/4 cups milk into another bowl.  Add pudding mixes .  Beat with wire whisk 1 minute.  
Gently stir in 1/2 cup whipped toping.
 
Spread 1/2 of of the pudding  mixture on bottom of crust.
Spread cream cheese mixture over pudding.  
Top with remaining remaining pudding mixture.
 
Refridgerate 4hours until set.  Garnish with remaining whipped cream.
 
helpful hint soften cream cheese in microwave 15 seconds


It may not look good, but it tastes delish!!

Let's Talk About Bullying

Over the past 6 years in the classroom, I've noticed a trend with our little "ladies."

When I was growing up, I remember the bully/trouble makers ALWAYS being boys. Well, that is surely not the case anymore. I have a seriously awesome group of boys this year. They never seem to fight over anything (aside from whose pokemon cards are whose) and they always include everyone.

My girls, holy heck, let me tell ya... they are a completely different story!! This year I have a class of 28 (previously 29, but one of my boys PCSd at Christmas time) kiddos, of which, 12 are girls... and of my 12 girls, I have 5 girls that are giving me a run for my money. When they're with me, they're angels, but the second they're out of my sight, they're pure terrors. They bully each other in the bathroom, on the playground, in enhancements, and everywhere else that I'm not around. It's driving me batty. And they're soooooo sneaky about it. And, it's not just my girls from this year. It seems like every year, it's the girls who are upsetting each other, rather than the boys.

Any of the other teachers seeing a trend like this? It seems like physical bullying is a thing of the past, but verbal bullying is getting OUT OF CONTROL, and it seems like its almost entirely little girls behind it. Sending each other mean text messages, making fake emails to send nasty messages, and the rumors... my God, the rumors...

When did our sweet little girls become such sneaky little bullies?

Let's just say, the guidance counselor and I are BFFs right now. She's been a saint about pulling these girls for me, since having 23 other children to look after makes dealing with their antics quite the challenge.

I seriously think there's something wrong with me...

So, yesterday I got my butt up & was productive until about 4:30 when I realized that I needed to go feed the horses (because I'm a baby about being out there at night. lol) and I needed to pick up some chicken for dinner (the hubs made us chicken stir-fry) I had put away the rest of babygirl's clothes, cleaned out some of mine to be donated, swept & mopped, and even MADE curtains! They're not quite done, since I can't find a pink plaid that I like, but they'll do for now (I'll be back with pictures later)... Then the horses & dinner happened... And, after that all productivity went out the window.

You'd think today maybe I would get up today with a renewed sense of motivation, (down to 83 days til my due date here people) but that's a big, fat NOPE. I fed the horses, and dumped some hot water in their tub since it was frozen & the owner hasn't found the water heaters yet, and I've been sitting here ever since. Doing what you may ask? Adding new boards and rearranging all my pins on pinterest.

WTF?! REALLY?! That's what I've been doing for the last TWO HOURS.

In my defense, the only pregnancy symptom I've had is being super exhausted all the time.

I'm at school from 7-4 pretty much every day, and when I come home, all I want to do is be lazy... and when it's finally the weekend, yup, lazy, lazy, lazzzzzzzzzzy. No morning sickness, no weird cravings (aside from the fact that I'm dying for a glass of wine, and although they say it's safe to have one small glass, I'm still not going to partake) no braxton hicks, or swollen feet (aside from the 22hr car ride over Christmas). Just pure exhaustion...

Being a lazy bum isnt going to get this place ready for baby, so I guess it's time I make my lazy bum get off the internet & get back to work... or get sucked back into pinning all the ideas I have for her, rather than actually doing them. Ooops.

All the blogs that I want to read aren't showing up, and all the people who I used to follow, who have stopped blogging, are still there... WTF (mental note: add deleting old blogs to my list of things to do)

cue panic attack NOW

So, I had every intention of announcing this a million times... and every time I decided today was the day I was going to do it, something came up. Bad blogger, I know. When was the last time I actually posted a SUBSTANTIAL post? Hmmm...

Anywho, the big announcement: We're expecting (just like 80% of the blogs I follow. What the heck is in the water?! Seriously, did I miss the memo & just happened to be part of the cool kids? And even 3 girls from my sorority in college... and were all having girls)

I planned on announcing it when we made it through our first trimester, but I suck. Then, I figured I'd do it when we found out what we were having, (It's a girl! :D) but I didnt do it then either... How about by posting it with a picture of the 238439845943 outfits I got from my mom & sister for Christmas? Oh right, my stupid blogger app is broken, and I didnt bother to bring the macbook on our Christmas trip around the northeast. I really wanted to make the announcement on a significant day... so the significance of today: the first day of trimester #3

WHAT THE HECK?! How did that happen?! Have I really been pregnant for 28 weeks?! Where the heck did the time go? 84 days left until I'm in charge of a little person. EEEEEEKKKKK... (84 days til maternity leave. WOOOHOOO. lol)

And so, thanks to my little pregnancy app, I'm have a MAJOR meltdown. I am not prepared AT ALL. Like not even a little. I see everyone posting their completed nurseries on here, as well as facebook, and I feel like I'm having a major FAIL moment. Instead of trying to get her room in order, I've been sitting on my couch all morning pinning all these great ideas via pinterest, but am I getting anything accomplished? Absolutely not!

So far I've:
Painted the room (or rather the hubs did)
Gotten her a crib
Been supplied with 28348375348 outfits thanks to family
Started stocking the diapers
And covered the electrical outlets... which is about the only craft I've bothered to actual complete, and not just add to my list of "do before the baby gets here"

Well listen up erin! The baby will be here in 84 days, so get your fat butt in gear!!

Before I get my butt in gear, I'll leave you with a few pictures of the hot mess that is our future nursery.

Then I had to ruin it by using my electric screwdriver & ripping the paper on the last screw (bottom right) Ughhh... You can barely see it, but it'll bother me forever. I need to think of a crafty fix that doesnt require me redoing it.

Woohoo.. At least we have a crib (complete with girly knobs) but sadly it is full of crap, with no room for baby

Baby girl crap that has yet to be put away... I plan on redoing those pink bins with new fabric... they have a home in a shelving unit, but sadly it is still in the garage, half painted (in my defense, the hubs wont let me spray paint, so that is all on him, for once)

The closet chock full... oh wait, those are my dresses... that have no where to go, because my actual closet is busting at the seems... guess I have to add cleaning it out to my list of things to do...

I did manage to put away a lot of her clothes... so I think I should get some credit... right?!

Alright, no more stalking blogs, pinning things to pinterest, or creeping on craigslist for a dresser the same color... operation take a shower & do something productive with myself today starts NOW :)

Breakfast Scramble

**I had meant to post this on Sunday, but my blogger app is beyond messed up. I think I might need to try reinstalling it. Rahr!



I only make breakfast on the weekends or days we both have off because I value my sleep too much. I posted a few weeks back about how I like to make breakfast sandwiches ahead of time, otherwise I grab some fruit, a hard-boiled egg, or some toast with Nutella

Since the hubs likes to mix all of his food together (yick! I can do breakfast, but please don't mix my dinner all up!) I decided to try to make a breakfast scramble.

I diced up some potatoes and boiled them until they started to get soft.
Then I tossed them in a pan with some salt & pepper.
Add whatever meats & veggies you want and cook til the potatoes are brown. I used turkey & mushrooms because it was all I had in the house.
Once the potatoes brown, toss in a few eggs & mix it all up.
Last, melt some cheese & voila! Breakfast is done :)



Totally unhealthy, but delish!

Greatest Idea Ever

It seems like nowadays, everyone is attached to their smartphone 24/7. I will admit that I am guilty of picking up my phone today during dinner with the hubs (only because it was my mom. lol).



So here is a fun little game that my friend posted the link for earlier today. The idea is that everyone sets their phone in the middle of the table when you set down for dinner. The first person to touch their phone has to pay the bill. I can't imagine how tempting it would be to know I have some sort of alert, and can not touch my phone. When I'm not around it, I don't think about checking it, but having it inches away and not being able to touch it would be very tempting. lol.

The article also states it started as a bar game... How many of y'all would be stuck buying the next round because you gave in to temptation?

I am not dead! :D

We were on block leave for 2 weeks, and my darn iPhone would NOT post any blogs after the pizza post. It kept telling me that I had insufficient something or other... and of course I didnt bring my laptop because I figured I could do whatever I needed on my phone Grrrrr....

Anyways, I am NOT dead. lol. I'm back to work and I promise to get back into regular blogging this weekend :D
